Phase 1: Preparing the Apple Juice Base (Time: 45 min | Intensity: Medium)
Prepare the Apples (10 minutes): Wash the apples thoroughly. Do not peel or core them. The pectin is concentrated in the cores and skins, which is essential for the jelly to set. Chop the apples into rough 1-inch chunks, discarding the stems and any bruised spots.
Boil the Fruit (30 minutes | Intensity: High to Low): Place the apple chunks in the stockpot. Add the 4 cups of water. Turn the heat to High and bring the mixture to a rolling boil.
Simmer (20 minutes | Intensity: Low): Once boiling, reduce the heat to Low. Cover the pot and let the apples simmer gently. Stir occasionally and mash the apples with a potato masher to release their juices. The apples should become completely mushy and translucent.
Strain (4 hours | Intensity: Passive): This step is crucial for clarity. Wet a jelly bag or a double layer of cheesecloth and line a colander placed over a large bowl. Pour the cooked apple mash into the lined colander. Allow the juice to drip through by gravity for at least 4 hours, or overnight. Do not squeeze the bag, as this will make the jelly cloudy.
Phase 2: Cooking the Jelly (Time: 25 min | Intensity: High)
Measure the Juice: You should have approximately 4 cups of apple juice. If you have less, add a bit of water to reach the 4-cup mark; if you have more, save the extra for another use.
Sterilize Jars: While you prepare the jelly, wash the jars and lids in hot, soapy water. Place them in a water bath canner filled with water and bring to a simmer (Medium-High heat) to keep them hot until ready to fill.
Combine Ingredients: Pour the 4 cups of apple juice into a clean, large pot. Add 1/4 cup of the lemon juice.
Add Pectin: Stir in the packet of powdered pectin until completely dissolved. It is important to add the pectin before the sugar to ensure it activates properly.
Boil the Mixture (Time: 10 min | Intensity: High): Turn the heat to High and bring the juice mixture to a full rolling boil—a boil that does not stop bubbling when stirred.
Add Sugar: Pour in the 4 cups of sugar all at once. Stir constantly to dissolve the sugar.
